oh, just some Paleo waffles i whipped up

waffles are a saturday morning staple around here and i got a new, flippy type waffle maker for christmas :-)

right out of the gate, i knew this recipe would be yummy and the kids just gobbled it up!

8 eggs, separated
4tbs olive oil
1tbs pure vanilla
1.5 tsp baking soda
1/4tsp salt, plus a pinch more
1/2tsp cinnamon
2/3 cup coconut milk
1/2 cup coconut flour
1tbs organic honey

separate eggs. place whites in stand mixer fitted with whip. to the egg yolks, add oil, vanilla, coconut milk and honey and mix well. in a separate mixing bowl, combine baking soda, salt, cinnamon and coconut flour and mix well.

whip egg whites on high speed until stiff peaks form. mix together egg yolk mixture with coconut four mixture, then gently mix in 2/3 of whipped egg whites. finally gently fold in last 1/3 of egg whites into mixture.

fill your waffle maker according to directions (about 1 to 1 1/2 cups batter) and cook approx. 2 minutes. enjoy with pure maple syrup.
